Sodium nitrite, the chemical formula is NaNO2. It is soluble in water and its aqueous solution is alkaline due to hydrolysis of nitrite. Sodium nitrite has both oxidizing and reducing properties, mainly oxidizing. In acidic solution, it is mainly oxidizing, and in alkaline solution or a strong oxidizing agent, it is reducing, and sulfur, phosphorus, organic matter, etc. Friction or impact can cause combustion or explosion. Sodium nitrite can react with oxygen in the air to produce sodium nitrate. When acidifying sodium nitrite solution with strong acid, nitrous acid is generated. Nitrous acid is very unstable, easily decomposes into nitrogen dioxide, nitric oxide and water.

It is used as a hair color agent, an anti-microbial agent, and a preservative in meat product processing, but it is not allowed to exceed the standard due to its carcinogenicity. According to GB1907 national standard production as a food additive, according to GB2760 quantitative addition, the maximum amount of meat is 0.15g/kg, the meat sodium nitronitrate residue in the can shall not exceed 0.05g/kg; Meat products shall not exceed 0.03g/ kg.
