Sodium nitrite, commonly known as nitrate, is an inorganic compound with the chemical formula NaNO2. It is a white to light yellow powder or granular substance, resembling table salt, monosodium glutamate and white granulated sugar in appearance. It is odorless, hygroscopic, toxic, highly soluble in water, slightly soluble in methanol . Its aqueous solution is alkaline, with a pH value of approximately 9. Sodium nitrite is a strong oxidizing agent with reducing properties. It gradually oxidizes in the air, and its surface turns into sodium nitrate. It can also be oxidized by oxidizing agents. It decomposes upon encountering weak acids and releases brown nitrogen dioxide gas. Contact with organic substances and reducing agents can cause explosion or combustion and release toxic and irritating nitrogen oxide gas. It can also be oxidized by strong oxidants, especially ammonium salts. For instance, at room temperature, they can interact with ammonium nitrate, ammonium persulfate, etc., generating high heat and causing combustibles to catch fire. It is mainly used for manufacturing azo dyes and can also be used as a mordant, bleaching agent and metal heat treatment agent for fabric dyeing.

1. Antidote (Cyanide poisoning)
Nitrite can oxidize hemoglobin to methemoglobin. Methemoglobin can combine with cyanide ions (CN⁻) to form non-toxic cyanated methemoglobin, thereby eliminating the acute toxicity of cyanide (it needs to be used in combination with sodium thiosulfate).
2. Biological experimental reagents
In biochemical experiments, nitrite can be used as a reagent to detect the activity of proteins, amino acids or enzymes (such as diazotization reactions for detecting aromatic amino acids).
