Sodium nitrite is an inorganic salt formed by the combination of nitrite ions and sodium ions. Sodium nitrite is easily deliquescent and easily soluble in water and liquid ammonia. Its aqueous solution is alkaline and slightly soluble in organic solvents such as ethanol, methanol. Sodium nitrite has a salty taste and is sometimes used to make fake table salt. Sodium nitrite reacts with oxygen to form sodium nitrate when exposed to air. If heated to above 320°C, it decomposes to form nitrogen dioxide, nitric oxide, and sodium oxide. It is easy to burn and explode when in contact with organic matter.
