Sodium nitrite (NaNO2) is often used in fish, meat and other food coloring and anticorrosion. Pure sodium nitrite is a white to pale yellow crystal. It has very good water solubility and hygroscopicity, aqueous solution is weakly alkaline, pH is about 9, soluble in liquid ammonia, slightly soluble in ethanol, methanol, ether and other organic solvents. Sodium nitrite has a salty taste and is used to make fake table salt. In air, sodium nitrite is slowly oxidized to sodium nitrate (NaNO3), which is a powerful oxidant. Sodium nitrite is liable to explode when it meets organic matter.
Sodium nitrite is also used in the following areas:
Production of diazo dyes, nitroso compounds and other organic compounds; Dyeing and bleaching of fibre textiles; Photography; As anti-corrosive agent in laboratory; As an additive in metal coating; Rubber production. Its 10% aqueous solution is also used in electroplating. Sodium nitrite is also used in vasodilation and bronchodilation drugs in humans and animals, and even in cyanide detoxification.
