Sodium nitrite is easily deliquescent, soluble in water and liquid ammonia, its aqueous solution is alkaline, its pH is about 9, slightly soluble in ethanol, methanol, ether and other organic solvents. Sodium nitrite has a salty taste and is used to make fake table salt. When exposed to air, sodium nitrite reacts with oxygen to form sodium nitrate. If heated to 320℃ above decomposition, the formation of oxygen, nitrogen oxide and sodium oxide. Contact with organic matter is prone to combustion and explosion.

Use
Sodium nitrite as bleaching agent for silk and linen, metal heat treatment agent; steel corrosion inhibitor; antidote for cyanide poisoning, laboratory analysis reagent, used as coloring agent, anti-microbial agent, preservative in meat processing. It has applications in bleaching, electroplating and metal processing, and is called industrial salt.
Pharmacology
Sodium nitrite can turn hemoglobin into methemoglobin, and the detoxification process of cyanide is the same as that of methylene blue, but the effect is stronger than that of methylene blue. It is suitable for the rescue of cyanide poisoning.
Harm
Because sodium nitrite has a salty taste and is cheap, it is often used as an unreasonable substitute for salt in the production of illegal food. Because sodium nitrite is toxic, food containing industrial salt is very harmful to the human body.
